    It is so much great fun to take my toddler to the grocery store and shop together for food that we actually make together. Our personal favorite is making pizza. Just get the premade dough, pizza sauce, pepperonies and anything else that sounds good. We love making little faces on our pizzas :)

    My son loves when I pour juice into ice trays. He prefers it halfway frozen so he can eat the ice easier. Another great snack is frosen seedless grapes. Just set them in the freezer! They are really good!

    Here is a recipe for what I made last night, it was very tasty and so easy!

    1lb Grass Fed Ground Beef (optional)

    3 cloves of garlic minced

    1tbsp minced ginger

    1/2 small onion diced

    2 med carrots shredded

    2 cups of green peas

    1 cup Jasmine Rice

    21/2 cups water

    3 tbsp olive oil

    Salt and Pepper to taste

    1 tsp Cumin

    1/2 tsp Allspice

    1/2 tsp Cinnamon

    In a large soup pot, heat the oil, add ground beef, garlic, ginger, onion and carrot, salt and pepper to taste. Stir occasionally until beef is browned but still pink the the center and vegetables began to soften. Add peas and rice, salt, pepper, cumin, all spice, and cinnamon, stir until spice and veggies are evenly distributed with meat and rice. Add water, bring to a boil, reduce to simmer, cover and cook on low heat for approximately 20-25 minutes. Then serve!

    Note: I thought this would also make a good stuffing for a large roasted squash, pumpkin or served in individual roasted bell peppers. Maybe I will serve it that way next time :)

    Here is what I like to call a leftover/makeover from the other night. My 3 yr old loved it! I took some leftover tomato soup (Organic Pacific Natural), added vegetable broth, carrots, onion, garlic, celery, and organic chicken breast meat. Seasoned with salt, pepper, basil and oregano. Brought to a boil added spiral pasta, boiled for 10 minutes reduced to low, stirred in 1 cup of organic half and half and tada! Soup there it is :)

    Here is a SUPER EASY recipe. I picked up some spinach spaghetti at our local farmers market, boiled as directed and set aside. In a saute pan add chopped yellow squash, crushed garlic, olive oil, salt and pepper. When the squash is tender add the spaghetti and toss until spaghetti is heated through. Add Parmesan cheese if you like and serve!

    This was so easy and super tasty! Last night’s dinner, Asian Inspired Chicken Noodle Soup: Boneless Skinless Chicken Breast Chopped, Shredded Broccoli, Carrots, Garlic, Onion saute with olive oil until chicken is no longer pink. Add salt, 5 spice powder, lemon grass and pepper, and Trader Joe’s Carrot Ginger Soup, chopped rice noodles (not too much they really expand) bring to boil until noodles are soft. Spoon into bowls, top with fried onion, Tada!

    Here’s another leftover/makeover; I had leftover fried rice that I made with brown rice, broccoli and adzuki beans. I added some sauteed yellow squash, sweet potato, onion, garlic, salt and 5 spice powder. Pulse in the food processor until combined. Wrap in eggroll wrappers, fry until golden brown, blot on paper towles to absorb excess oil and serve with your favorite dipping sauce. The hubby and the 3 yr old, loved them!

    Sounds yummy, not sure what yellow squash is though, lol, but I’ll google it.
    What section of the supermarket/(asian grocer?) do I find eggroll wrappers?

    Although this is probably known to most parents, bolognese sauce is a great way to add some veggies to your kids diets. I make it with pasta, brown rice or buckwheat.

    I use turkey mince (less saturated and trans fats than beef),I put shredded carrots, shedded zucchini, tomatoes, canned corn, mashed sweet potato or pumpkin. I then mix with some type of tomato based pasta sauce.
    Love bolognese because you can conceal so much in it if you have fussy toddlers.

    I also think Jessica Seinfeld is worth checking out, she is known for recipes that ‘smuggle’ veggetables into foods that your children like. Someone in my mothers group once made some of her brownies that had veggies in them and they tasted pretty good. (however beware of high sugar, salt content thats added to conceal veggie taste!)

    @Alexandra, egg roll wrappers at Safeway are in the refrigerated section near the produce, where they have the herb packets and re made salad stuff.

    Here is a quick pick me up, a couple of frozen bananas, a handful of strawberries, tbsp cocoa powder (or a superfood cacoa powder) and a splash of almond milk, blend until smooth.

    Fruit Roll Ups
    From My Edible Advice

    2 cups organic strawberries
    ¼ tsp cinnamon

    Blend the fruit until smooth, then spread onto a Teflex sheet or a parchment-lined baking sheet.

    If using a dehydrator, dehydrate at 105 degrees F for 8-10 hours or until the fruit is pliable and easy to peel from the sheet.

    If using an oven, leave it on at the lowest temperature until the fruit is dry (times will vary depending on the oven).

    Cut into strips and store in a glass container in the refrigerator.

      Oh my God, I did not know these could be done simply in the oven. I LOVE these. But the ones you get at the store have like a never ending igredients list!

    Another leftover/makeover. Had a couple of NITRATE FREE chicken sausages leftover, so I cut them up, sauteed with garlic, onions and red bell pepper. 1 Cup of Jasmine Rice, salt, pepper, cumin, coriander, a little chili powder. Add 2 cups filtered water, bring to boil, reduce to simmer…20-25 minutes later, Tada a new dinner!

    Here is a super easy recipe, Chicken Yakatori with Japanese Buckwheat Noodles and Peas. There are lots of recipes online for Yakatori, but I didn’t use Saki in mine, just Soy Sauce, Organic Brown Sugar, a little Rice Wine Vinegar and Water. Marinate chicken thighs in half the sauce. Bring water to a boil for noodles, boil as directed. Grill chicken. Drain noodles, saute’ in pan with peas and remaining Yakatori Sauce.

    One of my favorite Leftover/Makeovers is Quiche! I get the Organic Spelt Pie Crusts at the natural food store and keep a couple in the freezer for those night when time just got away from me or I have a small amount of veggies or meat leftover and need a quick meal. Take your favorite veggies, in this one I used spinach and garlic, sauteed in olive oil, put in the frozen pie shell, add 2 eggs beaten with approximately 1 cup of milk, salt and pepper, add some cheese and bake as directed on the pie crust package until crust is browned and filling is solid to the touch.

    Molten Chocolate Cakes

    .Prep Time:10 min Inactive Prep Time:– Cook Time:30 min
    Level: Easy Serves: 4 servings.
    Ingredients
    1 1/2 teaspoons unsalted butter, plus 1/4 pound (1 stick)
    4 teaspoons all-purpose flour, plus 2 tablespoons
    6 ounces bittersweet or semisweet chocolate, chopped
    2 tablespoons cold heavy cream
    2 tablespoons confectioners’ sugar
    2 large eggs
    2 large egg yolks
    1/4 cup sugar
    1 teaspoon vanilla extract

    Directions
    Preheat the oven to 450 degrees F. Grease and flour 4 (6-ounce) ramekins or baking dishes with the 1 1/2 teaspoons of butter and 1 teaspoon of flour in each, tapping out the excess flour. Set on a baking sheet.

    In a double boiler, or a metal bowl set over a pan of simmering water, melt the remaining 1/4 pound of butter with the chocolate, cream, and powdered sugar, stirring until smooth. Remove from the heat.

    In a bowl, whisk together the eggs, egg yolks, sugar, vanilla, and salt until thick ribbons form, about 3 minutes. Sift 2 tablespoons flour into the egg mixture and fold together. Fold the chocolate into the egg mixture. Divide among the prepared dishes and bake until the sides of the cake are set and the tops are puffed but still soft, about 12 minutes.

    Remove from the oven and let cool in the ramekins for 2 minutes, then unmold onto dessert plates.

    In Emeril’s recipe he tops with whipped cream and raspberries, which is wonderful, but I didn’t have heavy cream so I made a little caramel sauce and topped with strawberries…Either way it’s super easy, delicious and impressive when you’ve got guests!

    The perfect little burger just the right size for me and the boy! Grass fed beef, garlic, herbs, crystal salt, cracked pepper, sharp cheddar, sauteed onions, tomatoes and a little mayo. It hit the spot :)

    Happy Meatless Monday! Savory rice bowl tonight; Carrots and garlic from the garden, zucchini, bell pepper, salt, pepper, basil, oregano and a dash of cayenne with brown basmati rice, simmered in vegetable broth.

    This is my take on Sheppard’s Pie, hope you enjoy it!

    1lb Ground Beef or Turkey*

    1/2 small onion diced

    2 cloves garlic minced

    2 cups of green peas

    1 cup chopped carrots**

    2tbsp Olive Oil

    Salt to taste

    Pepper to taste

    2 large Russet Potatoes** peeled and sliced thin (use a mandolin if you’ve got one or grater if not)

    Saute the onions and garlic in the olive oil for a couple of minutes until soft, add ground meat, cook until meat is half way done, add peas, carrots and any other veggies you may want to add. Add salt and pepper to taste.

    Place contents of your saute pan in a baking dish and top with the sliced potatoes or grated potatoes, just slightly layering them, salt and pepper potatoes and place in a pre-heated oven at 375 degrees. Cook until potatoes are a light golden brown color (approx 25-30 minutes).

    *Ideal ground meat is grass fed beef; however, turkey works well too. Make sure the meat is hormone and antibiotic free (ask your butcher), do not purchase discount pre-ground beef from the grocery store (it can contain the beef from up to 100 cows, as well as ammonia and fillers), if this is your only option, purchase another cut of beef like a roast and have the butcher grind it up for you.

    **Root vegetables should be purchased Organic to avoid harmful pesticides inside the root.

    Chicken Parmesan, a family favorite! Everyone has their own way of making it…here is my way.

    Organic (to avoid the excess antibiotics and arsenic in regular Chicken Feed) , boneless skinless chicken breasts, coat liberally in flour and seasoning (salt, pepper, garlic powder, basil, oregano) add to skillet with hot shallow oil, pan fry 5 minutes on each side until golden brown and crisp outer crust has formed. Remove from oil place on paper towel to absorb excess oil.

    Add chicken to a skillet top with cheese add sauce, simmer on low while pasta boils, about 8 minutes. Drain pasta, toss with olive oil, place sauce and chicken on top.

    Serve!

    Some nights are perfect for Grilled Cheese and Tomato Soup. I like to use the Trader Joe’s Organic Tomato Soup as a base, I heat it on the stove low heat, add fresh garlic crushed, cracked pepper and fresh basil from the garden chopped.

    Get your favorite bread and one soft cheese like fresh Mozzarella and One hard cheese like Fontina or Havarti. Place a slice of each on the bread, grill in a pan with olive oil then top with dried oregano.

    Before serving, swirl 1 tbsp of Organic Cream or Half and Half in the soup bowl for a nice creamy texture, then serve.

    Here is another leftover makeover. Sauted garlic, zucchini and basil added leftover tomato soup and a tablespoon of flour to thicken the soup, salt and pepper to taste. Toss with linguini and a very quick and tasty meal :)

    This is something my hubby loves, I call it chicken wing Pizza. Use chicken thigh meat, it’s most like wing meat, cook 2 chicken thighs in a pan with olive oil, garlic, chopped carrots, onion and hot sauce (to taste), if you need more liquid add a little broth and simmer. Remove the thighs and chop into small bite size pieces, return to pan. Place toppings on your homemade dough or Organic Rustic Crust and top with shredded monterey jack cheese. Bake for about 10-12 minutes then top with cold chopped celery and serve with a side of ranch dressing!

    Got leftover veggies, make a veggie Shepard’s Pie. Saute some veggies in olive oil add garlic, salt, pepper and top with some creamy mashed potatoes and cheese. Bake till cheese is bubbly and serve. Warm, filling goodness!!

    Such a SIMPLE dinner but it was so TASTY! I toasted some homemade bread, put it in the food processor with garlic, carrots, basil and oregano from my garden, salt and pepper and coated some chicken thighs. Baked them till the crust was crisp and brown, served with a side of broccoli and butternut squash ♥

    Determined to get more veggies in our dinner, tonight a veggie lasagna the filling was chopped spinach, broccoli, carrots, garlic, basil, oregano, salt, pepper and ricotta cheese. The sauce was some leftover potato-leek soup and topped with a little Mozzarella. We were hungry so we cut into it before I took the photo, lol…so here is a cropped version, but you get the idea :)

    Last Night’s Chicken Leg leftovers made a stellar performance in tonight’s LEFTOVER MAKEOVER!! Diced Chicken, White Onion, Garlic, Jalapeno, Cilantro, Tomato and Cheddar Cheese over Corn Tortilla Chips (all Organic ingredients as usual, for a pesticide, hormone, antibiotic FREE delight) !!
